The Pampore valley in Kashmir has grown saffron and tea for over four centuries, and the knowledge of how to prepare Noon Chai — the pink, saline, cardamom-scented tea of the Valley — is passed down through families, not textbooks. The Pampore Co-op brings together 40 small growers at 1,650 metres elevation, each tending terraces their grandparents first cleared.
