The principle of harvesting only the youngest shoot of the tea plant is not a British colonial invention. Its first systematic statement appears in the Chajing — the Classic of Tea — written by Lu Yu in Tang dynasty China around 760 CE. Lu Yu described harvesting the newest shoot as essential to quality. The British planters who formalised "two leaves and a bud" as a management standard in Darjeeling and Assam in the 1860s and 1880s were codifying something understood for over a thousand years.

The reason is chemistry. The bud — the terminal, unopened leaf at the tip of the shoot — contains the highest concentrations of L-theanine, catechins, EGCG, caffeine, and essential volatile oils of any part of the plant. The two young leaves below it contribute body and processing mass. The third leaf and beyond are primarily structural: cellulose, fibre, and tannins that add astringency without aromatic benefit. Fine plucking, where at least 85% of the harvest basket meets the bud-plus-two-leaf standard, is the threshold that separates specialty tea from commodity.
On a fine-plucking day at altitude, a picker handles 20 to 30 kilograms of green leaf. That is somewhere between fifteen and twenty thousand individual decisions: assess, locate, pluck. The rule is simple. The discipline required to follow it across an eight-hour shift on a steep slope at 1,800 metres is not.
The yield comparison makes the economics clear: commercial estates using coarse plucking produce 2,000–3,000 kg of finished tea per hectare per year. Fine-plucked Darjeeling yields 200–400 kg per hectare per year. The price premium that allows fine-plucking estates to survive on lower volume is not charity. It is a direct consequence of the chemistry in that bud — and of the fifteen thousand decisions made each day to honour it.
